Summer’s Superfoods: Why Colorful Veggies Are Your Body’s Best Friend

Nature doesn’t make mistakes — and when you see bright, colorful vegetables in abundance during summer, that’s your sign to fill your plate with them.

Each color represents a different set of phytonutrients (plant compounds) that do everything from reducing inflammation to supporting glowing skin. We eat fresh produce knowing that it’s “ good for us”…. but here’s some of the actual benefits that you may not have known.

Red – Tomatoes, Red Peppers, Radishes

Red veggies are rich in lycopene and anthocyanins, antioxidants known for:

  • Protecting against sun damage (natural UV shield!)

  • Supporting heart health

  • Lowering inflammation and oxidative stress
Tomatoes also contain potassium and vitamin C, which support immunity and skin health.

Orange & Yellow – Carrots, Sweet Corn, Yellow Squash, Bell Peppers

These colors are packed with beta-carotene, which your body converts to vitamin A:

  • Supports vision and eye health

  • Boosts immune function

  • Promotes healthy skin
Corn is also a good source of fiber and B vitamins, supporting digestion and energy production.

Green – Zucchini, Cucumbers, Green Beans, Leafy Greens

Green veggies are loaded with chlorophyll, folate, vitamin K, and magnesium:

  • Help detox the body naturally

  • Support bone health and hormone balance

  • Promote digestive health
Cucumbers are hydrating and cooling, perfect for reducing bloat and keeping skin fresh in summer heat.

Purple – Eggplant, Purple Cabbage, BeetSs

These contain anthocyanins, powerful antioxidants with brain-boosting and anti-aging benefits:

  • Improve cognitive function

  • Reduce inflammation

  • Support healthy circulation
Eggplant is also a great source of fiber, aiding digestion and stabilizing blood sugar.

Why prioritize summer produce?

  • It’s fresher and more nutrient-dense when in season

  • Often more affordable and local, meaning less environmental impact

  • Encourages variety — which keeps your gut happy and your meals exciting!

I try to eat at least 3 colors on my plate every day for a balanced mix of nutrients- give it a try …. add some color to your plate!
